I’ve been fighting a losing battle with a cold since last Tuesday, but I’m almost back to 100%. While my body and the rest of the country know that it’s winter, Los Angeles does not. It’s gotten into the 80s on several occasions this past week. In embracing LA and all its wonder, this summer weather demands cool treats.
The boy loves ice cream, and while it isn’t my dessert of choice I can’t help but crave it in this unusually warm weather. We’re both trying to get in shape for various spring events, so this easy dairy-free treat is a great solution to our sweet tooths. It’s a simple combination of frozen banana slices, peanut butter, and a touch of vanilla extract put into a food processor, and you have a creamy and refreshing soft serve. I found myself without vanilla extract and substituted maple syrup for today’s batch.
